A Nintendo food chain would be very colourfull, have snacks that nobody has ever seen before, people have to be 18+ to get mayonaise with them and they'll have a few but loyal costumers.

Or something like that.

He's basically saying they would be innovative, and I guess Mayonnaise is something sexual, so you have to be over 18 to play sexual/adult games (to put parents at ease) and loyal customers refer to loyal fans.

Nintendo is very protective.

Actually it would be more like... they had no mayonaise. Only ketchup, but it comes in packages that take 1 minute to open.
