Thanksgiving Meatloaf

2.5 lbs ground Turkey
2 Eggs
I can corn (drained)
2 carrots (small dice)
2 celery sticks (small dice)
2 onions (small dice)
1 package dry Stovetop Stuffing (Sage)
1 tbsp dijon mustard (makes everything better)
1 tsp season salt (optional, depends on how salty you like it)
1 tsp fresh ground pepper

Combine ingredients and bake at 375 for about 45 minutes or until your themometer hits "poultry". Let it sit for 15 minutes and serve with cranberry sauce. Makes great sandwiches.
